History: Beets, or beetroot, is a taproot part of the beet plant. Along with its amazing nutritional and superfood qualities, it has a history of use in food coloring and medicine. Beetroot’s use has been found in the Netherlands and in Egypt, which dates several thousand years ago, and cultivated in Mesopotamia and then Greece around 300 BC. Evidence shows that early use was just the plant leaves, while the beautiful colored roots were “offered to the Gods”. Beets would be used for medicinal purposes and even eaten for “life extension”. In the Roman cookbook Apicius, beetroots were used in soups and salads.
Uses: To enhance color of juices, sauces, desserts and preserves. A sweet ingredient in desserts, soups, beef, pork and potatoes.
